Vegan, Gluten Free Alfredo

In case you’re still on the hunt for some delicious and generally healthy;) recipes to make when you’ve got a house full, here’s a round up of some of my favorites :)!
MAIN DISHES
Cauliflower Jalapeño Spiced Alfredo​gluten free, vegan
This dish is completely creamy, comforting, delicious…and guilt free! Best of all, when served with green beans and tomatoes, it looks very festive, too!

Quinoa Spinach Scalloped Potatoes Bakegluten free
A perfect one-pot meal for the day before or after the holidays….it’s filling, healthy and comforting.

SIDES
Grilled Fennel and Goat Cheese —gluten free
This appetizer is a family favorite…it’s light and pretty versatile.

Cannellini Bean & Kale Vegan Bisquegluten free, vegan
This creamy, healthy soup is hearty on it’s own or makes for a great side.

SNACKS & DRINKS
Rice Crackers + Hummus + Kraut —​ gluten free, vegan
Easy, healthy and delicious…a perfect for kids and adults in between meals, late night snacks and for travel days! ​

Homemade Popcorn — gluten free, vegan
Our family loves getting in a few movies during the holidays…and we LOVE munching on our home popped popcorn the best! Who really needs microwave popcorn when you can make the real deal in just minutes?​

Chai-Spiced Eggnog —​ gluten free, vegan
I’ve made this for many gatherings and am happy to report that friends have always been happily surprised when I told them it was vegan!

DESSERTS
Walnut, Coconut & Cream Cheese Shortbread—​ gluten free, vegan
These cookies are just pure-simple-beautiful-melt-in-your-mouth bites of holiday goodness.

Pistachio & Chocolate Thumbprint Cookies—​ gluten free, vegan
These are like shortbread cookie with a hint of pistachio and a dollop of chocolate :).

Blackberry Apple Crumble Pie  — gluten free, vegan
My mother-in-law’s, tried and true recipe….seriously the best pie ever!
